Ingredients
Base:
- 2 tablespoons quinoa flakes
- ½ cup almond meal
- 2 tablespoons coconut flakes
- 1 teaspoon pure vanilla extract (or essence)
- 1 tablespoon raw honey
- ½ cup macadamia nuts
Top:
- 2 tablespoons chia tea (cold)
- ½ tablespoon coconut oil
- 1 teaspoon ground cinnamon
- 2 tablespoons cacao powder
- 1/3 cup coconut yoghurt
Method
- Prepare the Chai tea (for the top), set aside to steep and cool
- Add the base ingredients to the bowl of the machine, using the quad blade pulse until they come together.
- Remove the ingredients from the bowl using a spoon or spatula and push the mixture down to fill small muffin tins about 1/3 way up. Repeat until all of the mixture is used.
- Add the bases to the freezer to set
- Add the coconut oil to a heat proof bowl and melt
- Stir in the cacao powder and the cinnamon and mix until free from lumps
- Add the remaining ingredients and stir to combine
- Remove the bases from the freezer and pour the mixture for the top over each base.
- Return to the freezer to set
- Remove from the freezer five minutes prior to eating. Sprinkle with more cacao powder, nibs or edible flowers to serve.
Store in an airtight container in the freezer.
