  1. Combine breadcrumbs, herbs and garlic and lemon rind in a bowl and mix well.
  2. Season with salt and pepper 
  3. Spread the top of each lamb rack with mustard and press bread crumb mixture over the top.
  4. Heat oil in the frypan on SAUTE setting. Place racks, crust side down and cook for 6 minutes or until golden. Turn racks over, and cook for further 6 minutes.
  5. Reduce heat to SIMMER setting. Cover with lid and cook 10-15 minutes.
  6. Remove from pan, cover loosely with foil and allow to stand for 10 minutes before serving.
