Macadamia Cheese

Ingredients

  • 155g macadamia nuts
  • 3 teaspoons lemon juice
  • ½ teaspoon Himalayan salt or sea salt
  • Pinch of freshly ground black pepper

Method

  1. Soak the macadamia nuts in 750 ml of water for at least one hour (up to four hours). Drain and rinse well.

  2. Place the macadamia in a food processor; add the lemon juice, salt and pepper and pulse for a minute to combine.
  3. Add 60ml of water and continue to process until smooth. Can be stored in the fridge for 5 – 7 days.
