Serves: makes 1 small jar
Ingredients
2 cups tightly packed basil leaves
1/2 cup sunflower seeds
2 cloves, garlic, minced
3/4 cup olive oil
3 tablespoons lemon juice
1 tablespoon apple cider vinegar
Salt and pepper to taste
Method
Combine all the ingredients in the Mini Boss To Go and blitz intermittently to combine.
Transfer to a glass jar and keep stored in the fridge.
+ to ensure the pesto blends well in the mini boss this recipe uses more liquid,; a combination of olive oil, lemon juice and apple cider vinegar. This creates a looser pesto.
++ you may need to stop and stir half way to ensure an even blend.
