Ingredients

Base:

  • 2 tablespoons quinoa flakes
  • ½ cup almond meal
  • 2 tablespoons coconut flakes
  • 1 teaspoon pure vanilla extract (or essence)
  • 1 tablespoon raw honey
  • ½ cup macadamia nuts

Top:

  • 2 tablespoons chia tea (cold)
  • ½ tablespoon coconut oil
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cacao powder
  • 1/3 cup coconut yoghurt

Method

  1. Prepare the Chai tea (for the top), set aside to steep and cool
  2. Add the base ingredients to the bowl of the machine, using the quad blade pulse until they come together.
  3. Remove the ingredients from the bowl using a spoon or spatula and push the mixture down to fill small muffin tins about 1/3 way up. Repeat until all of the mixture is used.
  4. Add the bases to the freezer to set
  5. Add the coconut oil to a heat proof bowl and melt
  6. Stir in the cacao powder and the cinnamon and mix until free from lumps
  7. Add the remaining ingredients and stir to combine
  8. Remove the bases from the freezer and pour the mixture for the top over each base.
  9. Return to the freezer to set
  10. Remove from the freezer five minutes prior to eating. Sprinkle with more cacao powder, nibs or edible flowers to serve.

Store in an airtight container in the freezer.
