Easter Hot Cross Buns

Sydney baker Andres Fatso is well on her way to becoming a household name, with her amazing range of sweet treats taking social media by storm and wowing buyers. She is a fulltime nurse and finds herself baking at all other hours of the day. The owner of Baked by Andres bakery has been promoting her cakes through Facebook and Instagram, with her imaginative designs creating quite a buzz. Most recently her pictures and videos of cakes that look exactly like soft drink bottles have left viewers speechless.

 

Ingredients

 
  • 3 ½ cups plain flour 
  • 50g butter 
  • 14g yeast 
  • ¼ cup caster sugar 
  • 1 ½ teaspoons mixed spice 
  • pinch of salt 
  • 1 cup of sultanas and orange peels 
  • 500ml milk 
  • 2 eggs, lightly beaten  

The cross on the top

  • ¼ cup plain flour
  • 4 to 5 tablespoons water

 

Method

  1. Mix all dry ingredients together. 
  2. Melt butter in with the milk.
  3. Mix butter/milk and egg with dry ingredients till combined.
  4. Knead dough for 10 mins. 
  5. Let dough rest till double in size.
  6. Weigh dough out to even small portions - (images have used 80g)
  7. Roll dough to shape. Let rest till double in size. 
  8. Preheat oven to 200 degrees. 
  9. Prepare flour and water mixture. Make sure it is like toothpaste consistency. 
  10. Place mixture in pipping bag. 
  11. Pipe cross shape on to raised dough. 
  12. Bake at 200 degree for 17mins till golden brown. 
  13. Rest bun on cooling rack. 
  14. Serve with golden syrup and butter.
